Our Chef

Originally from Venezuela, Haissam Souki Tamayo began his cooking career in the city of Caracas. 

His debut in the world of gastronomy was an internship with chef Anna

Belen Myerston (a former student of famed French chef Guy Savoie), where he learned the value of quality ingredients and the chef's responsibility to respect them. 

It was during his first professional chef job, cooking alongside chef Takeshi Nagahama—who earned his stripes working in Barcelona restaurants like El Bulli and Can Fabes—that Tamayo first discovered Catalan cuisine. 

His newfound passion for the local flavours led him to venture to Spain. There, in San Sebastien, he went on to learn about Basque cuisine, working with chefs including Martin Berasategui and Pedro Subijana.

Tamayo has now been a rising star in the world of cooking for several years. Having worked in Michelin-star restaurants in both Venezuela and Spain, he decided to make food-loving Montreal, Canada his home. 

After leading a restaurant project with starred chef Carles Abellan for three years, he left to embark on a new challenge by opening IBÉRICOS restaurant on Montreal’s Saint Denis Street. Here he has found the perfect place to continue developing his creativity and passion for his craft.

The restaurant is warm and inviting, with a menu based on authentic Spanish ingredients but also inspired by local Quebec produce. The result is an eclectic mix of Spanish traditions and market cuisine, always informed by the culture and flavours of Spain.
